The Ultimate 5 cheese “Mac ’n’ cheese
Why have 1 cheese when you can have 5...? Stop being a wimp and push it to the limit, because this Mac 'n' Cheese is pumping iron.
I’m incredibly opinionated about Macaroni cheese. It’s one of the first things most people cook, and we all have our own finish and style. The thing is – my style is the right style. The sauce to pasta ratio is so important. I’m seeing so many really “way-to-dry” macs out there. And yes, it should be stringy with cheese- It’s fun and looks great, but the goo ratio is by and large more important and it’s worth noting that Stringy cheese dries out the dish and is a false commodity. That said – I’ve included it in the form of good ole mozzarella and some proper washed rind alpine jazz. You can use anything you like. I love Tommes de savoire, but also vacherin or even raclette would do. This accelerates it to another league.
